Aww, thanks. :) Unfortunately, all of the coding & whatnot is lost since I had to unexpectedly replace/upgrade my OS and wipe my computer’s hard drive. I have since learned to back up more often. Sigh.
I am trying to put together my teaching portfolio (in case I get a job interview any time soon) and I am trying to figure out what I should put in it (I’m thinking lessons that include knowledge of differentiated instruction is a must). My university did not really give me any information…

I tried brushing them with olive oil and baking them, but they just didn’t have enough crisp. I just pan-fried them in a little olive oil and it made a huge difference.
Yum yum. Spicy and oniony and garlicky and a hint of cumin and coriander. Yum.
Aaaaand away we go.
Decided to make flatbreads. The recipe said it makes 20… I got 8 small ones out of it. I thought it seemed odd that a recipe that used only 1 3/4 cups of flour would yield 20 servings.
Now for baked falafel.
Then perhaps a trip to the grocery store to pick up a few staples.
Today has been uneventful. Which is exactly what it needed to be.
I plopped down on the couch without looking first and luckily I caught myself in time because my cat made a very surprised noise.
Oops. The perils of being tired and distracted and living with a cat.
But I woke up with a headache and body aches. And I’m exhausted and feel nauseous. I’m hoping a day of strict rest will get me right as rain.
…I know they probably won’t get it until February, but I sent it in January! :)
I should probably just write in some dates to go to the Post Office now so it’s in my plans.
